Carnivore (PSMF) Bagels
I used a slightly modified version of Maria Emmerich’s wonder bread recipe to make bagels! I tried to make a batch of her bread with egg whites from a carton and they just would not whip up for me, even with cream of tartar, so this was my attempt to save the ingredients. As with the last loaf I made, I already had a few tweaks (feel free to omit these for strict carnivore):
Added 1 tsp nutritional yeast
Added 1 tsp baking powder
Decreased egg white protein from 1 cup to 1/2 cup
But since I wanted to attempt to turn these into bagels, I wanted a bit of chew so I also added:
1 tsp of xanthan gum
Overall, they came out quite well and do have a bit more chew which was exactly what I was wanting for a bagel. The only thing missing was the typical pull when you bite a bagel (but I’m not sure I’ll ever accomplish that without gluten). I had these this morning with some cream cheese and they were delicious! I’ll definitely make them again!
I also used the remaining batch of the failed to whip egg whites to make a pizza crust and some burger buns (no xanthan gum for those). So next time your PSMF bread isn’t going exactly as planned, keep all of these recipes in mind to save your ingredients. I’m also happy to report that I separated some egg whites right after this and made another successful loaf of PSMF bread. No more carton whites for me!
