More Keto Bread Baking and Crunchy Keto Snacks

Today I made a loaf of Wendy from Loving It On Keto’s Cheese Bread and Ranch Bread. I made a few minor tweaks to her recipe. You can watch her make her loaves here. The major change between hers and mine was I didn’t use any whole egg powder and instead used some butter powder and arrowroot - essentially Indigo Nili’s latest recipe which I really like for the texture, but with Wendy’s additions for flavor. Recipes below. Note I didn’t use any allulose in these loaves.

Cheesy Bread

Sour Cream Ranch Bread

Cheesy Bread Recipe:

  • 1 ¼ cup water

  • 100g egg white powder (1 ¼ cup)

  • ½ tsp cream of tartar

  • ½ tsp Remond real salt

  • 16g arrowroot powder (optional)

  • 12g butter powder (2 tbsp) (optional)

  • ⅔ cup cheddar cheese powder

The texture on this was a bit chewy - next time I think I will increase the butter powder to 3 tbsp as in Indigo Nili’s recipe - I reduced it some to account for the cheese powder and the fat in it. If you’re going to dehydrate the bread and make crunchy snacks it probably doesn’t matter.

Cheesy bread cubes in the dehydrator

Optionally you can cube up the bread and dehydrate it (I did 180 degrees F for 3 hours) to make some crunchy snacks.

Sour Cream Ranch Bread Recipe:

  • 1 ¼ cup water

  • 100g egg white powder (1 ¼ cup)

  • ½ tsp cream of tartar

  • ½ tsp Remond real salt

  • 16g arrowroot powder (optional)

  • 12g butter powder (2 tbsp) (optional)

  • ⅓ cup sour cream (38g)

The texture on this loaf was absolutely perfect! I can’t wait to try a sandwich on it. Also note, Wendy used cream cheese powder in her version, where as I went with sour cream powder. Either is probably great!
