Flourless Keto Carnivore Taco Shell Recipe
First off, I have to thank Mel of the ‘Cook with Mel’ YouTube channel, as making her recipe for keto flourless tortillas is what inspired this. I made them, and while they are quite delicious, I wanted something with a little bit more neutral flavor and that’s where the idea for some modifications came in. For my tweaks, I cut the parmesan in half, substituted the other half of the parmesan (by weight) with Pork Panko, and used whole eggs instead of egg whites. Here is the result!
While these come out pretty crispy just as they are, you can also pop them in the air fryer at 350 F for 2 mins to make them even crispier! Full recipe and instructions below.
Ingredients:
90g grated cheese (Parmesan or Pecorino Romano recommended)
90 g Pork Panko
2 whole eggs
2 tsp xanthan gum (optional)
1 tsp baking powder (optional)
1 tsp gelatin
Directions:
Mix dry ingredients until well blended
Add 2 eggs and mix well until a dough forms
Separate dough into small balls weighing approximately 48 grams each
Use a tortilla press to press each dough ball into a tortilla
Fry each tortilla on medium heat for 3-4 minutes on each side until golden brown
Use tongs or a spatula to remove the tortilla from a pan to your taco shell shaper
Optionally, for extra crispiness, air fry each shell while still in the taco shell shaper for 2 minutes at 350 F
Fill with your favorite taco fillings and enjoy!
