Animal Based Brownies

This recipe was inspired by the Keto Naturopath YouTube channel. If you’d like to see their original recipe you can find it here: https://www.youtube.com/watch?v=UKGeJtD62P8. Special thanks to them for the idea to use pork panko - yes you read that right - to replace flour. Recipe below with my modifications to make it even more animal based.

Ingredients:

4 tbsp butter, melted

1/2 cup Lakanto Monk Fruit sweetener (feel free to substitute your preferred sweetener)

2 eggs

1 cup pork panko

1/2 cup heavy whipping cream

1/2 tsp salt

1 tsp baking powder

1 tsp vanilla extract

1/2 cup cocoa powder

2 tbsp water

Mix all ingredients thoroughly (I used a blender as I’ve found it blends the pork panko very well and eliminates any texture issues when I’m making my carnivore pasta and I figured it would work well for this too). Pour into a greased (I used butter… keeping with the animal based theme here) 8x8 baking dish and spread evenly with a spatula* (it will be pretty thick). Bake at 350 F for 45-50 minutes. Allow to cool and enjoy!

*Optionally you can add some nuts if you tolerate them. I added some chopped walnuts to one side of the pan for my husband but kept my side nut free.
